Maritana, the resort’s signature fine-dining restaurant, returns with a refined focus on Gulf-fresh seafood, its menu unfolding in carefully composed acts. Oysters crowned with caviar, octopus accented with salmon roe, red fish prepared with precision, and a wagyu tomahawk meant for lingering evenings all speak to a kitchen that understands both indulgence and balance. Society Table, under the guidance of Chef Susan Burdian, offers a relaxed yet polished indoor-outdoor rhythm, reinterpreting coastal comfort food with warmth and ease from breakfast through dinner. Down by the beach, The Rowe Bar hums with energy, serving coastal-inspired plates and creative cocktails as day drifts effortlessly into night.
Beyond the dining rooms and ballrooms, The Don CeSar remains what it has always been at heart: a place for stories.
